COLOMBIA AREA 18 CASTILLO
Great coffee isn’t defined by variety alone.
It’s the combination of genetics, terroir, farming and processing that ultimately shapes what ends up in the cup.
This Natural Castillo from Area 18 is a perfect example. Grown in the mountains of Cauca and processed with exceptional care, it transforms one of Colombia’s most widespread varieties into a coffee full of vibrant fruit, remarkable sweetness and surprising complexity.
It reminds us that extraordinary coffees are created by people – not by names on a label.
WHY WE CHOSE THIS COFFEE
Sometimes the most exciting coffees are the ones that change our perspective. This Castillo immediately stood out during cupping – not because it tasted unusual, but because it demonstrated just how exceptional this variety can become when every stage of production is approached with precision and care. It reminds us that coffee should never be judged by variety alone. Great producers consistently prove that quality comes from thoughtful decisions, careful cultivation and respect for the coffee at every step.
ABOUT THE PRODUCERS
Area 18 represents a network of dedicated coffee producers working across the high mountains of Cauca, one of Colombia’s most diverse coffee-growing regions.
Rather than focusing on individual farms, Area 18 brings together carefully selected lots from smallholder producers who share the same commitment to quality and transparency. Each farm contributes only coffees that meet strict standards, allowing every lot to express both the character of the region and the craftsmanship of its producers.
This collaborative approach demonstrates that exceptional coffee is often the result of an entire community working towards the same goal.
ABOUT CASTILLO
Developed by Colombia’s National Coffee Research Centre (Cenicafé), Castillo was originally created for its resistance to coffee leaf rust and its ability to thrive in Colombia’s changing climate.
For years, the variety was judged primarily by its agronomic advantages rather than its cup quality.
Today, that perception is changing.
When cultivated at high altitude, selectively harvested and carefully processed, Castillo is capable of producing remarkably expressive coffees with vibrant fruit, refined sweetness and excellent structure – qualities that continue to challenge long-held assumptions within specialty coffee.
PROCESSING
This lot is processed using the Natural method.
Only perfectly ripe cherries are handpicked before being carefully dried with the fruit intact. Throughout the drying process, the cherries are regularly turned and closely monitored to ensure even fermentation and moisture loss.
Natural processing allows the coffee to develop greater sweetness, richer texture and deeper fruit complexity while preserving the clarity that characterises coffees from Cauca.
The result is a cup that is lively, expressive and beautifully balanced.
