WHY WE CHOSE THIS COFFEE
Huehuetenango has always been one of our favourite coffee regions. Its combination of high altitude, limestone-rich soils and dry climate creates coffees with remarkable balance. Bright without being aggressive, sweet without becoming heavy. Waykan perfectly represents that style. Rather than relying on experimental processing or unusual varieties, it showcases what careful farming and exceptional terroir can achieve on their own. Sometimes, simplicity is the greatest expression of quality.
PRocESSINg
Only fully ripe cherries are selectively handpicked before being delivered to local wet mills.
After depulping, the coffee undergoes a carefully controlled fermentation before being thoroughly washed and dried, either on patios or raised beds depending on the farm’s infrastructure and weather conditions.
This traditional washed process highlights the clarity, sweetness and elegant acidity that have become hallmarks of Huehuetenango coffees.
ABOUT THE PRODUCERS
Waykan is not a single farm, but a carefully assembled regional selection produced by smallholder farmers across Huehuetenango, one of Guatemala’s most renowned coffee-growing regions.
The name Waykan comes from the Mayan Mam language and means “The star that shines in the sky before dawn”. For generations, local producers have used this morning star as a guide before beginning work in the fields making it a fitting symbol of the people behind this coffee.
Most producers cultivate only a few hectares, often on steep mountain slopes where coffee grows under native shade trees. Their farms combine generations of experience with a deep respect for the land, producing coffees that consistently express the character of this exceptional region.

Regional blends often receive less attention than microlots, yet they can represent an origin just as beautifully.
When thoughtfully assembled, they capture the collective work of dozens of producers and offer a remarkably consistent expression of place.
